Did you conduct an interview yourself? Was the conversation more informal or did it take place via email? You'll only need to cite it in your text and/or notes unless it is critical to your argument or frequently cited.
Did you find the interview in some published form, whether recorded or printed? Your citation will resemble that of an article, with a few differences, including that the interviewee is treated as the author. (If it is clear from the title who the interviewee is, the name does not need to be repeated in the note.).
